Ingredients
- (2 Cups) Plain full fat yogurt (Bulgarian or Greek)
- (1 Large) Cucumber
- (2 Cloves) Garlic
- (1/4 Cup) Chopped Walnuts (optional)
- (2 Teaspoons, finely chopped) Fresh Dill
- (1 Teaspoon) Olive Oil
- (1/2 Teaspoon) Salt
- (1/4 Teaspoon) Black Pepper
- (1 Cup) Cold Water (adjust for desired thickness)

- Prepare the cucumber
Peel the cucumber and chop or grate it finely. Leaving a bit of peel on provides color and crunch. - Make the flavor base
Combine the garlic with a pinch of salt and the walnuts, then mash into a coarse paste using a mortar and pestle or small processor. This mixture adds body and aroma to the soup. - Smooth the yogurt
In a large bowl, whisk the yogurt until it becomes creamy. Bulgarian-style yogurt gives a classic tang, while Greek yogurt makes the soup richer and thicker. - Combine and thin the soup
Add the cucumber, dill, olive oil, and the garlic–walnut paste to the yogurt. Gradually pour in cold water until the soup reaches the consistency you prefer. - Chill and serve
Refrigerate for at least 30 minutes to let the flavors blend. Serve cold, adding crushed ice or a splash of ice water for an extra-refreshing finish.
