Stuffed lamb shoulder
This is a recepie of father Vasil from Uspenie Bogorodichno church published on Bonapeti tv program. I personally tried it home and it is gorgeous!!!
Lamb shoulder ( this is the whole piece of meat that includes the front leg plus part of the ribs, 3-4 kg alltogether). Butter for rubbing Paprika to taste For the stuffing: 125 g butter 1 bunch of green onion 1 teacup of rice Salt, ground black pepper, fresh parsley, fresh mint,paprika to taste
In a pan with a hot butter add the chopped onion, mint, parsley, paprika, ground black pepper, salt and the rice. Fry the mix, if needed add a little water. Make a pocket in the shoulder between the ribs and the leg and fill with the stuffing. Sew up the pocket. The whole piece put in a baking dish and rub with butter and red paprika. Cover the whole piece with a baking foil, add a teacup water in the dish and bake for about an hour and half.
