Zele sus svinsko na furna (Oven Roasted Cabbage with Pork)
1 pound Country style pork ribs
1 big cabbage head quartered and rough chopped
3-4 Carrots (medium) cubed
4 Stalks celery with leaves cubed
3-4 cloves garlic crushed
4 Tomatoes skinless cubed
2 tsp. paprika
2-3 tbls. olive oil
salt to taste
pepper to taste
summer savory (tchubritza) to taste
Half btl. of beer (Yengling)
Put the chopped cabbage in bowl and season generously with salt (about 2-3 tbsp.). Start crushing with hands until cabbage gets really soft. Leave for an hour.
Mix with hands carrots, celery, garlic, and tomatoes in the cabbage. Season with olive oil, pepper and paprika Leave aside.
Season pork with salt and pepper. Saute pork in large skillet until browned. Remove and set aside covered .
Deglaze skillet with the beer. Leave aside.
Turn oven on bake 325F. Set rack in the middle
Take a casserole or glass baking dish 15"x10"
Lay the cabbage mixture and nestle the ribs in it.
Pour beer liquid from the skillet over.
Add water until just covered. Sprinkle paprika.
