Stuffed tomatoes w/rice and cheese - new
Tomatoes Stuffed with Rice and Cheese
3 lbs tomatoes
1 cup rice
9 ounces cheese, grated (use something “yellow”, not feta or blue cheese, or ricotta)
4 ounces sausage (optional if you ask me)
1/2 cup vegetable oil (I’d say it’s also optional)
1 teaspoon paprika
parsley, fresh and chopped
1 -Hollow the tomatoes (reserve the pulp) and salt lightly.
2 -Boil the rice and let it cool and add the grated cheese, the chopped parsley, the finely cubed sausage and the paprika and black pepper to taste.
3 -Stuff the tomatoes with the rice mixture and arrange them in a greased oven dish over the grated tomato pulp.
4 -Pour the oil over the tomatoes and bake in a medium hot oven.
