Ayran - new
A favourite Bulgarian drink that is seen drunk all year round at home, in cafes, bars and restuarants.
The recipe is so simple but the end product so rewarding. It is more commonly know as buttermilk in the UK but will never be as popular as in the homeland of the base ingredient yoghurt.
500 ml plain yoghurt
500 ml pint cold water
A pinch or two of Salt
Pour the yoghurt into a bowl and beat or whisk until smooth, add the water and continue to beat or whisk until smooth again. Then, season with the salt, chill thoroughly and serve in tall glasses with ice.
